  • broccoli stored in the fridge in a loosely tied plastic bag keeps its freshness and quality longer than storing it in a vegetable rack at room temperature
  • if your broccoli is a bit soft, cut a thick slice off the bottom of the stalk, put it in a glass of water and leave in the fridge overnight
  • if you have lots of leftover broccoli, add a little skimmed milk and puree. Serve as a sauce for fish or chicken
  • don't discard the stalks. Peel the stalks, cut lengthways and cook with the florets or eat raw
