Norwegian waffles (Vafler)

Waffles are an essential Norwegian tradition. Not a week goes by in a Norwegian home without a waffle being eaten. Unlike the Belgium waffles, Norwegian waffles are large, soft and fluffy and fit perfectly folded in your hand.

Ingredients: (Makes 5 large waffles)
•    400 millilitres (or other non-dairy milk)
•    1 tablespoons of apple cider vinegar
•    75 millilitres sunflower oil or other neutral oil
•    50 grams sugar
•    1.5 teaspoons baking soda
•    1/2 teaspoon cardamom
•    pinch of salt
•    100 grams all-purpose flour
 

Method:
1.    Whip milk and oil together in a bowl, and leave to rest for 5 minutes until it thickens slightly. 
2.    Mix in the rest of the ingredients. Leave to rest for minimum 5 minutes. You can also leave it in the fridge overnight. 
3.    Fry away. Tip: put some oil or margarine in the iron to avoid sticking. 
To serve:  Serve with hot jam or sugar - tuck in and enjoy!
