Gypsy toast

This is a lovely savoury dish for breakfast and it’s quick and easy to make. It’s a great way to use up stale bread and any bacon or mushrooms that you may have in the fridge. A tasty start to the day, especially when served with a tangy homemade BBQ sau

Ingredients: (serves 1)

Toast:

  • 1 egg beaten
  • 40ml milk, any
  • 1 slice stale bread
  • Oil or butter for frying
  • Bacon (optional)
  • Mushrooms (optional)

BBQ sauce:

  • 2 tbsp soy sauce 
  • 1 tbsp tomato puree
  • ½ tbsp brown sugar (or use whatever sugar you have or honey) 
  • ½ tbsp lime or lemon juice or 1 tablespoon vinegar (not malt)
  • 1 clove garlic, crushed
  • Seasoning

 Method:

  1. For the toast whisk together the beaten egg and milk.
  2. Dip the bread into the egg and milk mixture.
  3. If using bacon cook that in the dry pan first until golden and use the excess bacon fat to cook the French toast.
  4. If using mushrooms cut into small chunks, cook in a pan with a dessert spoon of oil and a good dash of salt and pepper.
  5. Fry the bread in a non-stick pan in a little vegetable oil or butter until golden on both sides.
  6. To make the BBQ sauce simply mix all the ingredients together and bring to a gentle simmer for 2 to 3 minutes and it is ready to use as a sauce, marinade or dip. Season to taste.
