Eastern mess

This quick pudding can be whipped up in no time, perfect for when you have a sudden dessert craving. A slight twist on the traditional Eton Mess. Yoghurt is one of the most wasted foods as people don’t always use it before it spoils.

Ingredients: (serves 4)
•    meringues (homemade or shop bought)
•    500 grams yoghurt (Greek works well)
•    A splash of rose water (optional)
•    A punnet of raspberries (fresh or frozen work well)
•    Optional – rose petals, fresh raspberries, mint leaves and/or crushed pistachios to garnish
 

Method:
1.    Mix the rose water with the yoghurt.
2.    Swirl the raspberries through the yoghurt.
3.    Just before serving crush the meringues (not to powder) and add these to the yoghurt.
4.    Put into glasses to serve and decorate
