Christmas chutney

Chutney is a great way to use up fruits (both dried and fresh) and vegetables. This delicious Christmas chutney uses a blend of warming spices to make the most of what is available at this time of year.

Ingredients: (makes about 500 grams)
•    60 grams cooking apples - peeled and diced (pears are a great alternative)
•    60 grams dried dates - chopped
•    60 grams dried prunes – chopped
•    60 grams cranberry’s – fresh or dried
•    2 centimetres grated ginger
•    1 clove garlic – crushed (optional)
•    150 millilitres red or white wine vinegar
•    120 grams light brown sugar
•    pinch allspice
•    pinch cinnamon


 

Method:
1.    Place all the ingredients in a large saucepan.
2.    Bring to a simmer and stir well.
3.    Simmer for 30 - 40 minutes, stirring occasionally.
4.    Cook till the mixture is thick and syrupy.
5.    Spoon in to clean sterilised jars.
