Banana and date cake

Don’t throw away those over ripe bananas, use them to make this delicious sugar free cake.

Ingredients: (makes 10 slices)
•    300 grams wholewheat flour
•    1 tablespoon baking powder
•    180 grams dates
•    3 ripe bananas
•    3 teaspoons vanilla essence (optional)
•    125 millilitres milk (plant based milk is a good alternative)
•    125 grams margarine 
•    A few nuts (walnut, pecan) to decorate (optional)

 

Method:
1.    Preheat the oven to 170 Celsius and line a loaf tin with a base measurement roughly 10 x 20 centimetres.
2.    Put the flour and baking powder in a bowl and mix thoroughly. 
3.    Roughly chop the dates, add to the flour and mix.
4.    Put the bananas, vanilla essence (if using) and milk in another bowl and mash together until thoroughly combined and set aside.
5.    Melt the margarine in a small saucepan over a low heat and then stir it into the flour.
6.    Add the mashed banana mix and combine well. 
7.    Pour the cake mixture into a lined loaf tin, decorate the top with nuts.
8.    Bake for about 25 minutes or until a knife inserted in the centres comes out clean.
9.    Allow to cool before removing from the tin.
